peppermint crisp nice cream
Growing up, I had a few food combinations that would make me cringe.
Sweet and salty popcorn?
Salt sprinkled over apples?
Cucumber dipped into peanut butter?
Pineapple mushed in stir fries?
Don't even get me started on pineapples on pizza.
And then there was chocolate and mint. "Would you like to brush your teeth with mint toothpaste while eating a bar of chocolate?", I would remark snidely to my friends.
This went on for years. But then I just simply grew up and all of sudden chocolate and mint didn't seem too bad.
So here is my take on everyone else's favourite childhood (or, if you are like me, adult-favourite) food combo: Peppermint Crisp, made into a nutritious and energising breakfast bowl with frozen bananas and raw chocolate granola (aka rawnola).
This recipe calls for some powerhouse ingredients, including:
Bananas - a vegan's life source. Packed with a high vitamin B-6 content and an abundant source of potassium, you can grow new cells while keeping those post-workout cramps at bay.
Spirulina - a nutrient-dense and complete, highly digestible protein, with substances that support important hormonal functions.
Peppermint Essential Oil - something you may associate with massages rather than with eating (let alone paired with bananas). However, it's perfectly safe to eat in small amounts and is cooling, calming and great for digestion.
Cacao Powder - great for the heart, mind and mood, this powdery brown substance can be snorted, sprinkled, solidified, or in the case of this recipe, simply blended.
and Desiccated Coconut - a healthy fat that fights osteoporosis and maintains healthy bones. You can be sure you will be walking upright until the ripe old age of 100.
ingredients for the chocolate rawnola:
1 cup oats
1 cup dates
1/4 cup desiccated coconut
1/8 cup cacao nibs
2 tbsp cacao powder
1 tsp vanilla powder
1 tsp maple syrup
1 - 2 tsp water
1. Blend all the ingredients together in a food processor until coarsely chopped.
2. Form the rawnola into rough bit-sized chunks.
3. Store in a jar in the fridge.
ingredients for the nice cream:
4 bananas, peeled and frozen
1 tsp spirulina powder
1 - 2 drops peppermint essential oil
1/2 tsp vanilla powder
1. Blend the frozen nanas in a food processor with the spirulina, peppermint and vanilla until smooth, thick and creamy.
2. Go lightly on the peppermint essential oil. Trust me on this.
3. Spoon the nice cream in a bowl and top with the chocolate rawnola.
