Braaied Mushroom and Fry's Chicken Burger

For someone who recoils at the sight of warm pineapple on pizza, in curries or otherwise, who prefers an actual bread roll over some limp low-carb bunless thing, and who hasn't eaten chicken in over three years, this recipe really tested my boundaries. 

But sometimes all you need is a little nudge and a push to get out of your comfort zone. So for a night, I swapped my regular sweet potatoes and tahini with a meal that pushed my cooking abilities and taste buds to the limits.

For those who are not South African, "braai" is a typical slang word for "barbecue". People come together, drink beer, watch rugby and cook meat. In my case, I drank kombucha, watched a YouTube video on how to braai (much to the disbelief of my South African mates, I have never braaied before), and cooked chicken-style patties.

The result? Well, the house didn't burn down to smithereens, the patties cooked all the way through and my four dinner guests gave the burgers a stamp of approval. 

If you are looking for something a bit different to nom tonight, I would highly recommend this recipe. It was generously shared with me by the wonderful Fry Family Food Co. team, and now you get to make it yourself too. 

ingredients for the basil & wild rocket pesto 

1 cup fresh basil 

1 cup fresh rocket 

1/4 cup roasted cashews 

1/4 pine nuts 

1/2 cup olive oil 

1 tbsp lime or lemon juice 

Salt and pepper 

for the burgers 

2 boxes Fry's Chicken Burgers

Oil for brushing 

8 large brown mushrooms 

pineapple, peeled and sliced 

to serve 

Baby spinach, vegan cheese and sliced tomato 

method 

For the basil and wild rocket pesto: Place all ingredients in a food processor and blitz until combined. Taste and correct seasoning as needed.

For the burgers: The burgers are best cooked over hot coals, so get the braai going. Brush each burger with a little oil and braai until golden brown. Baai the mushrooms and pineapple slices until just cooked and the edges charred.

To serve: Top a mushroom (underside up) with baby spinach and a slice of tomato. Add a Fry's Chicken Burger, a slice of cheese, pineapple, a second Fry's Chicken Burger patty and a second slice of cheese. Top with pesto and cover with a second mushroom. Season with cracked salt and pepper as you assemble.
