With World Earth Day happening this Sunday (22nd April 2018), I was inspired to create something super green to celebrate the magnificent environment that surrounds us each day. Sometimes we can go for days without being in nature, and sometimes we can go for days without even acknowledging it - the flowers, trees, clouds, water, and birds around us - as we go about our daily lives. 

When we make the time to slow down, we are able to notice the subtle miracles of Mother Earth and what she provides for us day in and day out with all the generosity and love that she can offer. Indeed, if we remain open to the messages and lessons, nature is one of the greatest teachers.

When Wazoogles asked me to create a recipe for World Earth Day, I knew that it had to be vegan - as choosing to eat this way leaves the smallest footprint on the planet in terms of how much we take from nature, including water, land and energy. While every food choice we make indeed has an impact, choosing plants over meat and dairy leaves the lightest blemish on Mother Earth's skin. Eating plant-based also causes the least amount of animal suffering too, and animals are also part of the ecosystem. Our food choices over the many, many years have caused massive amounts of habitat loss, ocean zones and devastating species and biodiversity extinction.

Raw, vegan, oil-free, high-protein, gluten-free, paleo, low-carb, high-energy, and filled with superfoods!

makes 8-10 balls 

prep time: 15 mins

ingredients 

1 & 1/2 scoops Wazoogles Plant Power Superfood Protein Powder

1 & 1/4 cup dates (soaked in hot water before) 

1/4 cup almonds

1/4 cup goji berries 

1 tbsp chia seeds

1/2 tsp cinnamon powder 

2 tbsp water (you can use water from the soaked dates) 

1/4 cup frozen mixed berries, thawed

1/2 tsp maple syrup

matcha tea powder 

method

1. Soak the dates in hot water for a few minutes. 

2. In a food processor or blender, add the dates, almonds, goji berries, chia seeds, cinnamon and water. Blend until the mixture comes together in a thick dough-like texture.

3. Separate the dough and roll into balls. 

4. Gently slice the balls in half. 

5. With your index finger, make a little indentation into the middle of each half.

6. Mash the thawed berries with maple syrup in a small bowl and fill one side of the halved date balls with some of the crushed berries. 

7. Press the halves back together. Pinch along the seam with your finger and then roll the ball again to smooth the edges in your hands. 

8. Sprinkle some matcha powder in a bowl or plate and roll each ball evenly to coat. 

9. In an airtight container, store in the fridge to set. 

Enjoy at room temperature with a matcha latte :)
