raw vegan banana not-bread
I love this recipe because it doesn’t require me to turn on an oven, figure out complex measurements or wait in suspense for something to rise.
This banana bread is not bread but it tastes like how I would imagine raw nana bread to taste. It’s super yummo and incredibly simple to make. It’s also gluten-free, sugar-free, oil-free and bad karma-free! These thick slices of sweet deliciousness are filled with omega-3 boosting walnuts, decadent and heart-healthy pecans, activated buckwheat, cinnamon and nature’s gift: Dates. Oh, and of course it’s made withblanabas (aka nanas aka bananas)! I trust you will enjoy this as a snack, breakfast slice or preworkout boost!
2 ripe bananas
2 cups pecans
1 cup walnuts + more for serving (about 1/4 cup, roughly chopped)
1 cup dates, soaked in hot water (if using dried dates)
1/2 cup activated buckwheat
1 tsp cinnamon
Pinch of fine sea salt
In a food processor, blend the nuts and buckwheat until semi-fine. Then add the dates, bananas, cinnamon and sea salt until it becomes a dough texture. Take out the processor blade and stir in the chopped walnuts.
Line a container with some baking paper. Transfer the pretend-pretend bread mixture into the container. Close. Store in the freezer overnight.
