There was always that one tin can that miraculously appeared in the cupboard, hiding behind the olives, tomato paste and jars of rice. While it was slightly out of reach and sight, it was now burnt in the forefront of my mind. The solution was simple: the only way to soothe the burn would be to eat it. Devour it. Lick every crevice of it.

That poor tin can stood no chance. How could I blame it? It was filled with caramel, for goodness sake!

Growing up, "caramel" was like a sin in our household. You never mentioned it, asked for it or bought it. And if you happen to lay your hands on it, be sure to destroy all evidence as quickly as possible - by eating it.

But I'm past that hiding-and-sneaking life that defined my youth. No longer do I (or any of you) have to endure any more shame or guilt in consuming caramel! From this moment on, eat away sweet tooth lovers, for now I present to you a super healthy caramel recipe, and it happens to contain superfoods and coffee too, just to keep you on your toes ever so slightly. 

It's sweet and gooey like caramel but requires minimal cooking and minimal science to create it. That means (and if you've ever made your own caramel, you will know it's no walk in the park) you don't have to heat the ingredients to that one, specific temperature, nor do you have to be a perfectionist when it comes to stirring to get it to that one, specific texture. Simply soak and blend, baby!

I have provided two ways of going about this recipe: the DIY way and the Wazoogle way. It is up to you depending on what ingredients you have available. Enjoy my fellow, sweet unicorns!

ingredients: the DIY way  

1 cup dates, soaked 

3-5 tbsp water

1/4 tsp hemp seeds

1/4 chia seeds 

Pinch of ground coffee beans

Pinch of cinnamon

ingredients: the wazoogles way

1 cup dates, soaked

3-5 tbsp water

1/2 tsp Wazoogles Kungfu Coffee Superfood Blend (or any coffee flavoured vegan protein powder of your choice!). 

method

1. Blend the dates in the food processor.

2. Add all of the other ingredients. Slowly add water and blend until the date caramel is smooth. Scrape down the sides of the food processor ensuring all ingredients are well blended together. It takes a bit of patience but the wait is certainly worth it!

3. Add to smoothie bowls, nice cream, oatmeal, on toast or with baked sweet potatoes!
